Garlic Tarragon Lemon Butter

Method

Prepare the Ravioli Dough

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and water. Mix until a cohesive dough forms. Knead for about 8-10 minutes until smooth and elastic.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Prepare the Filling

    Prepare the Seafood

    If not already pre-cooked, steam the seafood mix (shrimp, lobster, crab, mussels) until just cooked through, about 5-7 minutes. Allow to cool, then chop into small pieces.

Assemble the Ravioli

    Roll Out the Dough

    Divide the rested dough into four portions. Roll out each portion using a pasta machine or a rolling pin until thin, about 1/16 inch thick.

    Fill the Ravioli

    Place small spoonfuls of the seafood filling about 1 inch apart on one sheet of dough. Brush the edges with water, then lay another sheet of dough over the top. Press down around the filling to seal and cut into squares.

Cook the Ravioli

    Boil the Ravioli

    In a large pot of salted boiling water, carefully add the ravioli. Cook for 3-5 minutes or until they float to the surface. Use a slotted spoon to remove them and drain.

Prepare the Garlic Tarragon Lemon Butter

    Make the Butter Sauce

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Stir in chopped tarragon and lemon juice. Season with salt and black pepper to taste.

Serve

    Plate the Dish

    Place the cooked ravioli on a plate and generously drizzle with the garlic tarragon lemon butter. Top with additional pieces of seafood if desired.
