Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Cream the Butter and Sugar

In a large mixing bowl, cream together the granulated sugar and softened unsalted butter until light and fluffy, approximately 3-5 minutes.

  3. 3

    Add Eggs and Vanilla

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. 5

    Mix Dry Ingredients with Wet

Gradually add the dry mixture to the wet mixture, mixing until just combined. Do not overmix.

  6. 6

    Pour into Pans

Divide the batter evenly between the prepared cake pans.

  7. 7

    Bake the Cakes

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

    Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting Preparation

  1. 9

    Beat Butter and Sugar

In a large bowl, beat the softened unsalted butter until creamy. Gradually add the powdered sugar, mixing on low speed until well combined.

  2. 10

    Add Cream and Vanilla

Add the heavy cream and vanilla extract, and beat on medium speed until the frosting is light and fluffy.

  3. 11

    Add Food Coloring

Add the pink food coloring one drop at a time, until you achieve the desired shade of pink.

Assembly

  1. 12

    Frost the First Layer

Place one cake layer on a serving plate. Spread a generous amount of pink frosting on top.

  2. 13

    Add the Second Layer

Place the second cake layer on top of the frosted layer.

  3. 14

    Frost the Top and Sides

Spread frosting evenly over the top and sides of the cake.

  4. 15

    Decorate the Cake

Sprinkle edible glitter on top of the cake. Garnish with fresh raspberries and mint leaves as desired.
