In a large bowl, combine soy sauce, honey, minced garlic, ginger, rice vinegar, sesame oil, salt, and black pepper. Mix well until the honey is fully dissolved.

Marinate the Pork Belly
Cut the pork belly into thick slices and place them into the marinade. Ensure that each piece is well coated. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Preheat your oven to 160°C (320°F).

Roast the Pork Belly
Remove the pork belly from the marinade and place it on a baking tray lined with parchment paper. Reserve the marinade for basting. Roast in the oven for about 1.5 hours, basting every 30 minutes with the reserved marinade until the pork is caramelized and tender.

While the pork is roasting, chop the green onions and cilantro. Set aside for serving.
