Method

Crust Preparation

    Prepare the Nuts

    In a food processor, combine raw cashews and pecans. Pulse until finely chopped but not pureed.

    Mix the Crust

    Add olive oil, salt, and garlic powder to the nut mixture. Pulse until well combined and crumbly.

    Press into a Pan

    Transfer the nut mixture to a greased pie dish or tart pan and press down firmly to form an even crust. Refrigerate while preparing the rest.

Carmelized Onion

    Slice the Onions

    Peel and thinly slice the onions.

    Cook the Onions

    In a skillet, melt butter over medium heat. Add sliced onions and salt, cooking slowly until they become golden and caramelized, about 20-25 minutes.

    Add Balsamic Vinegar

    Stir in balsamic vinegar and cook for an additional 2-3 minutes. Remove from heat and set aside.

Crostini Preparation

    Prepare the Baguette

    Slice the baguette into 1/2 inch thick slices.

    Toast the Slices

    Brush both sides of the baguette slices with olive oil. Preheat the oven to 375°F (190°C) and arrange the slices on a baking sheet. Toast in the oven for 10-12 minutes until golden.

Roasted Garlic

    Prepare the Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves.

    Roast the Garlic

    Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes until soft and caramelized.

    Cool and Squeeze

    Once cool, squeeze the roasted garlic cloves out of their skins and mash into a paste.

Assembly

    Spread the Goat Cheese

    Spread goat cheese evenly over the prepared nut crust.

    Layer with Onions and Garlic

    Top the goat cheese with the caramelized onions and dollops of roasted garlic paste.

    Add Pickles

    Finely chop dill pickles and sprinkle over the top.

    Serve with Crostini

    Slice the toasted baguette crostini and serve alongside the goat cheese tart for spreading.
