Soup Preparation

    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced yellow onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for another minute. Pour in the dry white wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a simmer and let it cook for about 20-30 minutes to develop the flavors.

Crouton Preparation

    Prepare the Croutons

    While the soup is simmering, preheat your oven to 400°F (200°C). In a bowl, toss the sliced baguette with olive oil and garlic powder until evenly coated.

    Bake the Croutons

    Spread the baguette slices on a baking sheet in a single layer. Bake in the preheated oven for about 10-12 minutes or until golden and crispy, turning halfway through.

Serving the Soup

    Assemble and Serve

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls. Top each bowl with a generous amount of shredded Gruyere cheese and a few croutons.

    Place the bowls on a baking sheet and broil in the oven for about 2-3 minutes or until the cheese is bubbly and golden brown. Serve immediately.
