Steak Preparation

Season the Steak
Sprinkle the dry aged steak on both sides with salt and black pepper. Let it sit at room temperature for about 30 minutes to enhance the flavor.

Thinly slice the onions into rings.

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook for about 20-30 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Prepare the Cheese
In a mixing bowl, combine the mozzarella, cheddar, parmesan, gorgonzola, and provolone cheeses. Set aside for assembly.
Horseradish Cream

In a small bowl, combine the sour cream, prepared horseradish, and lemon juice. Stir until well blended and set aside.

Prepare the frozen French fries according to package instructions. Once cooked, sprinkle with salt to taste.
Assemble the Sandwich

Cut the baguette in half lengthwise and toast it lightly if desired.
