Method

Prepare Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken Breasts

    Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound them to an even thickness (about 1/2 inch).

    Stuff the Chicken

    Spread a layer of goat cheese over each chicken breast. Add a few basil leaves and a slice of prosciutto on top of the cheese. Carefully roll up the chicken breasts, starting from one end, and secure with toothpicks if necessary.

    Season and Sear

    Season the stuffed chicken breasts with salt and black pepper. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side until golden brown.

    Bake the Chicken

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C). Remove from the oven and let rest for 5 minutes before slicing.

Prepare Bucatini Alfredo

    Cook the Bucatini

    In a large pot of salted boiling water, cook the bucatini pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Alfredo Sauce

    In a medium saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1-2 minutes until fragrant. Stir in the heavy cream and bring to a simmer.

    Finish the Sauce

    Gradually whisk in the parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Season with salt and black pepper to taste.

    Combine Pasta and Sauce

    Add the cooked bucatini to the sauce and toss to coat evenly. Cook for an additional 2-3 minutes over low heat to allow the pasta to absorb the flavors.

Serve

    Plate the Dish

    Slice the stuffed chicken breasts and arrange them on plates. Serve the bucatini alfredo alongside the chicken. Garnish with additional basil leaves if desired.
