Oysters

Oysters Rockefeller

Lobster Tail

Saffron Beurre Blanc Mussels

Method

Oysters

  1. 1

    Prepare Fresh Oysters

Rinse the fresh oysters under cold water. Place them on a platter and serve with lemon wedges and hot sauce on the side.

Oysters Rockefeller

  1. 2

    Make Oysters Rockefeller

Preheat the oven to 400°F (200°C). In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Stir in chopped spinach and cook until wilted. Remove from heat and mix in parmesan cheese, breadcrumbs, salt, and pepper. Place the 5 oysters on a baking sheet, spoon the mixture over each, and bake for 10-12 minutes until golden brown.

Shrimp

  1. 3

    Sauté Shrimp

In a bowl, toss the shrimp with olive oil, minced garlic, lemon juice, salt, and pepper. Heat a skillet over medium-high heat and sauté the shrimp for about 2-3 minutes on each side until pink and cooked through.

Lobster Tail

  1. 4

    Cook Lobster Tail

Preheat the grill or broiler. In a small bowl, mix melted butter, minced garlic, paprika, salt, and pepper. Cut the lobster tail lengthwise and brush the mixture over the meat. Grill or broil for about 8-10 minutes until the meat is opaque and cooked through.

Saffron Beurre Blanc Mussels

  1. 5

    Prepare Saffron Beurre Blanc Mussels

In a large pot, melt the butter over medium heat. Add minced shallots and sauté until translucent. Pour in white wine and let it reduce by half. Stir in heavy cream and saffron threads, and simmer for about 5 minutes. Add the mussels, cover, and cook until they open, about 5-7 minutes. Season with salt and pepper before serving.
