Method

Preparing the Short Ribs

    Season the Ribs

    Preheat your oven to 300°F (150°C). Season the bone-in short ribs generously with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the short ribs and sear until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the minced garlic, chopped onion, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

    Deglaze and Add Liquid

    Pour in the red wine and scrape the bottom of the pot to deglaze. Add the beef broth, thyme, and bay leaves, and bring to a simmer.

    Slow Cook

    Return the short ribs to the pot, cover with a lid, and transfer to the preheated oven. Cook for 3-4 hours, or until the meat is tender and falls off the bone.

Preparing the Potato Puree

    Cook the Potatoes

    While the short ribs are cooking, place the peeled and cubed russet potatoes in a pot filled with cold salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Serving

    Plate the Dish

    Once the short ribs are done, remove them from the oven and let them rest for a few minutes. Serve the short ribs over a generous scoop of potato puree, and spoon some of the braising liquid over the top.

    Garnish and Enjoy

    Optionally, garnish with additional fresh thyme or parsley. Enjoy your delicious bone-in short rib with potato puree!
