Make the strawberry puree

Place hulled strawberries, granulated sugar, lemon juice, and cold water into a blender or food processor. Blend on high until completely smooth, about 20–30 seconds. If you prefer a very silky spritzer, strain the puree through a fine-mesh sieve into a bowl, pressing down with a spatula to extract as much liquid as possible. You should end up with about 3/4 to 1 cup of puree.

Adjust sweetness and chill

Taste the puree and adjust sweetness by adding up to 1 teaspoon more sugar if needed, stirring until dissolved. Chill the puree in the refrigerator for at least 10 minutes if not using immediately.

Assemble the drink

Fill a highball or Collins glass with ice cubes (about 1 cup). Pour 2 to 3 tablespoons (about 30–45 ml) of the chilled strawberry puree over the ice for a lightly flavored spritzer; use up to 1/4 cup (60 ml) for a more intensely fruity drink.

Top with soda

Slowly pour 8 ounces (about 240 ml) of chilled club soda over the puree and ice. Stir gently once or twice with a bar spoon to combine, being careful not to flatten the carbonation.

Garnish and serve

Garnish with 1–2 lemon slices on the rim and a mint sprig if using. Serve immediately with a straw or stirrer.

Batching tip

To serve multiple people, multiply the puree recipe (1 cup strawberries, 2 tbs sugar, 1 tbs lemon juice, 2 tbs water = approx. 4 single drinks at 2–3 tbs puree each) and keep puree chilled. Assemble each glass individually with soda to preserve fizz.
