Prepare strawberry purée (if not using pre-made)

Hull and quarter 3–4 medium ripe strawberries. Place in a blender or food processor with a teaspoon of simple syrup if needed and blitz until smooth. Strain through a fine-mesh sieve into a small bowl to remove seeds. Yield: about 2–3 oz purée.

Add 2 oz Ketel One Vodka, 0.75 oz elderflower liqueur, 0.5 oz fresh lemon juice, 0.25 oz simple syrup and 1 oz strawberry purée to a cocktail shaker.

Fill the shaker with ice (about 4–6 large cubes). Secure the lid and shake vigorously for 12–15 seconds, until the shaker is very cold to the touch and the mixture is well chilled and slightly diluted.

Finish & Serve

Strain the cocktail through a fine strainer into a chilled coupe or large Champagne flute to remove ice shards and any remaining seeds. Fill the glass about two-thirds full.

Top gently with 2 oz chilled sparkling rosé. Pour slowly over the back of a bar spoon if you want a delicate layering and to preserve effervescence.

Garnish with a thin lemon twist and a halved or fanned fresh strawberry on the rim or floated on top.

Serve immediately. Stir gently with a cocktail pick if the purée begins to separate before drinking.
