    Prepare the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.

    Sauté the Spinach

    In a separate pan, sauté the fresh spinach over medium heat until wilted, about 3-5 minutes. Season with salt and pepper. Remove from heat and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide the eggs into the simmering water. Poach for about 3-4 minutes for soft yolks, or longer for firmer yolks. Remove with a slotted spoon and place on a paper towel to drain.

    Toast the English Muffins

    While the eggs are poaching, split the English muffins and toast them until golden brown.

    On each toasted English muffin half, layer sautéed spinach, a slice of tomato, and a poached egg. Drizzle with Hollandaise sauce. Serve with crispy fried potatoes on the side.
