Prepare the Ingredients
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes.

Cook the Sausage
Add the sausage to the skillet and cook until browned and cooked through, breaking it up into smaller pieces as it cooks, about 5-7 minutes.

Add Chiles
Stir in the diced New Mexico chiles and cook for an additional 2-3 minutes until softened. Remove the mixture from the skillet and set aside.

Make the Omelet
In a bowl, whisk together the eggs, salt, and black pepper. In the same skillet, add another tablespoon of olive oil and pour in the egg mixture, cooking over medium-low heat.

Add Filling
Once the edges start to set, add the sausage, onion, and chile mixture to one half of the omelet. Sprinkle the cheddar cheese on top.

Fold and Finish
Carefully fold the other half of the omelet over the filling and cook for an additional 2-3 minutes, until the cheese is melted and the eggs are cooked to your liking.

Serve the omelet with warm tortillas and a side of green chile stew or salsa.
