    Sauté the Base

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

    Brown the Pork

    Add the cubed pork shoulder to the pot and brown on all sides, about 10 minutes.

    Add Remaining Ingredients

    Stir in the diced green chiles, diced potatoes, cumin, salt, and black pepper. Pour in the vegetable broth and bring to a boil.

    Simmer

    Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors meld together.

    Serve

    Taste and adjust seasoning if necessary. Serve hot in bowls, optionally topped with shredded cheddar cheese.
