    Prepare the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Then add bell peppers, mushrooms, broccoli, and spinach. Sauté for another 5-7 minutes until the vegetables are tender.

    Mix the Eggs

    In a bowl, whisk together eggs, milk, salt, and pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine. Cook on medium-low heat for about 5 minutes until the edges start to set.

    Add Cheese

    Sprinkle Swiss and cheddar cheese evenly over the top of the frittata. Cover the skillet and continue cooking for another 5-7 minutes, or until the cheese is melted and the frittata is set in the center.

    Serve

    Slide the frittata onto a serving platter or cut into wedges directly in the skillet. Serve warm with green chile stew or salsa on the side.
