    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Toast the English Muffins

    While the potatoes are cooking, split the English muffins in half and toast them until golden brown.

    In a separate pan, grill the ham slices over medium heat until heated through and slightly crispy, about 2-3 minutes per side.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then carefully slide it into the simmering water. Poach the eggs for 3-4 minutes for soft yolks or longer for firmer yolks. Remove with a slotted spoon and drain on paper towels.
