Prepare the Bread
Preheat your oven to 350°F (175°C). Cut the French bread into bite-sized cubes and set aside.

Mix the Custard
In a large mixing bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla extract, ground cinnamon, and salt until well combined.

Combine and Soak
Add the bread cubes to the custard mixture and let them soak for about 15 minutes, allowing the bread to absorb the liquid.

Add Peaches
Gently fold in the caramelized peaches into the bread mixture.

Transfer the mixture to a greased baking dish and bake for 45-50 minutes, or until the top is golden and the custard is set.
Brown Butter Caramel

Brown the Butter
In a saucepan over medium heat, melt the unsalted butter. Continue to cook until it turns golden brown and has a nutty aroma, about 5-7 minutes.

Add the brown sugar and water to the browned butter. Stir until dissolved and bring to a simmer. Cook for 3-5 minutes until thickened. Remove from heat and stir in heavy cream and a pinch of salt.

Quickly stir in the sliced almonds and pour the mixture onto a parchment-lined baking sheet. Allow to cool completely before breaking into pieces.
