Omelet Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on a paper towel to drain excess fat.

    In the same skillet, add the chopped mushrooms and sauté until they are golden brown. This should take about 3-5 minutes.

    Prepare the Eggs

    In a bowl, whisk together the eggs and season with salt and pepper. Pour the eggs into the skillet with the sautéed mushrooms.

    Add the Jalapeño Sofrito

    As the eggs begin to set, add the jalapeño sofrito and crumbled bacon on one half of the omelet.

    Add Cheese

    Sprinkle the Tillamook cheddar cheese over the bacon and sofrito, then fold the omelet in half. Cook for an additional minute until the cheese is melted.

Hollandaise Sauce Preparation

    Prepare the Double Boiler

    Fill a small pot with water and bring it to a simmer. Place a heatproof bowl over the pot to create a double boiler.

    Whisk the Egg Yolks

    In the heatproof bowl, whisk together the egg yolks and lemon juice until pale and slightly thickened.

    Add the Butter

    Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Season with salt and cayenne pepper.

Breakfast Potatoes Preparation

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a bowl, toss them with olive oil, paprika, garlic powder, salt, and black pepper.

    Spread the seasoned potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes until golden and crispy.

Toasting the Farm Bread

    Spread butter on each slice of farm bread and toast them in a skillet over medium heat until golden brown on both sides.
