Preparation of Burger Patty

Cook Quinoa
In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy. Set aside to cool.

Mash Black Beans
In a mixing bowl, mash 1 cup of canned black beans with a fork until mostly smooth, leaving some chunks for texture.

Combine Ingredients
Add the cooked quinoa, 0.5 cups of oats, 0.5 cups of finely chopped red onion, minced garlic, 1 tsp of cumin, 1 tsp of smoked paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper to the mashed black beans. Mix well until all ingredients are fully combined.

Form Patties
Divide the mixture into two equal parts and shape them into burger patties.

Assembling the Burger

Prepare Buns
Slice the whole grain burger buns in half and toast them lightly if desired.

Add Toppings
Spread 1 tbs of vegan mayo on each bun. Place a lettuce leaf on the bottom half, followed by a burger patty, and top with a slice of tomato.

Cover with the top half of the bun, and your vegan burger is ready to serve!
