Preparation and Cooking Meats

Prepare the Kansas City Burnt Ends
Trim the brisket and cut into 1-inch cubes. Season with your choice of rub and smoke them at 225°F for 4-6 hours until tender.

Cook the Ribs
Rub the half slab of ribs with a dry rub and smoke for 4 hours at 225°F, wrapping in foil for the last 2 hours to retain moisture.

Prepare Pulled Pork
Rub the pork butt with seasoning and slow-cook in a smoker or slow cooker for 8-10 hours until it shreds easily.

Cook the Pit Ham
Glaze the pit ham with BBQ sauce and bake at 325°F for 30-40 minutes until heated through.

Prepare the Brisket
Season the brisket with salt and pepper and smoke for about 12-14 hours at 225°F until tender.

Cook the Turkey Breast
Rub turkey breast with seasoning and smoke at 225°F for 3-4 hours until fully cooked.

Grill the hand-cranked sausage until browned and cooked through, about 20-30 minutes.
