    Trim excess fat from the brisket, leaving about 1/4 inch of fat on one side for flavor.

    In a medium bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper until well combined.

    Generously rub the dry rub mixture all over the brisket, ensuring it is evenly coated. Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking

    Preheat your smoker to 225°F (107°C) and add hickory wood chips to the smoker box according to the manufacturer's instructions.
