Method

Preparing the Vegetables

  1. 1

    Chop the Cabbage

Remove the outer leaves from the red cabbage, then cut it in half. Thinly slice each half to create shreds. You should have about 4 cups of shredded cabbage.

  2. 2

    Grate the Carrots

Peel the carrots and use a grater or food processor to shred them until you have about 2 cups.

  3. 3

    Slice the Bell Pepper

Remove the seeds and stem from the red bell pepper, then slice it into thin strips. You should have about 1 cup of sliced bell pepper.

  4. 4

    Chop the Green Onions

Trim the roots off the green onions and chop the green tops into small pieces. You should have about 1 cup of chopped green onions.

Making the Dressing

  1. 5

    Combine Dressing Ingredients

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, Sriracha sauce, salt, and black pepper until well combined.

Combining Everything

  1. 6

    Mix the Slaw

In a large mixing bowl, combine the shredded red cabbage, grated carrots, sliced red bell pepper, and chopped green onions.

  2. 7

    Add the Dressing

Pour the dressing over the slaw mixture and toss everything together until the vegetables are evenly coated.

  3. 8

    Add Optional Toppings

If desired, sprinkle chopped cilantro and sesame seeds over the top of the slaw for added flavor and texture.

Serving

  1. 9

    Chill and Serve

Let the slaw sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve cold as a side dish.
