Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

In a separate bowl, mix flour, cornstarch, paprika, salt, black pepper, and cayenne pepper. Remove chicken from marinade, allowing excess to drip off, then dredge each piece in the flour mixture, coating thoroughly. Place breaded chicken on a wire rack and let sit for 15 minutes.

In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Chicken
Carefully add chicken pieces to the hot oil in batches, frying for 12-15 minutes or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove chicken and drain on paper towels.

Whip Potatoes
Return drained potatoes to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
Pan Gravy

In the same skillet used for frying chicken, pour off excess oil, leaving about 1/4 cup. Add flour to the pan and whisk for 1-2 minutes until golden. Slowly add chicken broth while whisking, and cook until thickened. Season with salt and black pepper.
Creamy Slaw

Prepare Slaw
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are coated.
Buttermilk Biscuits

Make Biscuits
In a mixing bowl, combine flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn out onto a floured surface and gently knead a few times, then roll out to 1-inch thickness. Cut into rounds.

Place biscuits on a baking sheet and bake at 425°F (220°C) for 12-15 minutes until golden.
Tabasco-Honey
