Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it just until it comes together. Pat it into a 1-inch thick round. Use a biscuit cutter to cut out biscuits.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Gravy

Cook Sausage
In a large skillet over medium heat, cook the maple sausage until browned and crumbled, about 5-7 minutes.

Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to form a roux.

Add Milk
Slowly whisk in the milk, stirring constantly to prevent lumps. Cook until the gravy thickens, about 3-5 minutes.

Add black pepper and salt to taste. Adjust seasoning as necessary.
