Prepare the Ribs
Remove the membrane from the back of the ribs for better flavor absorption. Trim excess fat if necessary.

Apply Dry Rub
In a bowl, mix together brown sugar, paprika, black pepper, salt, garlic powder, onion powder, cayenne pepper, and dried thyme. Rub the mixture generously over both sides of the ribs. Let the ribs sit for at least 30 minutes to absorb the flavors.
Smoking

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes.

Drain the wood chips and add them to the smoker box or directly on the coals if using a charcoal smoker.

Smoke the Ribs
Place the ribs bone-side down on the smoker grates. Close the lid and smoke for about 4-5 hours, or until the meat is tender and has a nice smoke ring. Maintain a consistent temperature throughout the smoking process.

During the last 30 minutes of smoking, brush your favorite barbecue sauce over the ribs for added flavor and glaze.
