    Prepare the Ham

    Place the bone-in ham on a large cutting board and score the surface in a diamond pattern, making shallow cuts about 1 inch apart.

    Insert whole cloves into the intersections of the cuts on the ham. This will add flavor and create a beautiful presentation.

    Make the Glaze

    In a medium bowl, combine brown sugar, honey, mustard powder, paprika, and ground black pepper. Mix well to create a thick glaze.

Smoking

    Prepare the Smoker

    Soak wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).

    Place the scored ham in the smoker and brush generously with the glaze. Reserve some glaze for later basting.
