Method
Making the Root Beer Base
- 1
Prepare the Ingredients
Measure out all the ingredients needed for the root beer base and set them aside.
- 2
Combine Water and Sugars
In a large pot, bring 4 cups of water to a boil. Once boiling, add 1 cup of brown sugar and 1 cup of granulated sugar. Stir until fully dissolved.
- 3
Add Flavoring Ingredients
Add the sarsaparilla root, wintergreen leaves, birch bark, coriander seeds, nutmeg, and dried ginger to the pot. Let it simmer for about 15 minutes.
- 4
Strain the Mixture
After simmering, remove the pot from heat and strain the mixture through a fine mesh sieve to remove the solids. Return the liquid to the pot.
- 5
Add Vanilla and Citric Acid
Stir in 2 tsp of vanilla extract and 1 tsp of citric acid into the strained liquid.
- 6
Cool the Mixture
Allow the mixture to cool to room temperature.
- 7
Add Yeast
Once cooled, sprinkle 1 tsp of active dry yeast into the mixture and stir gently. Let it sit for about 10 minutes until bubbly.
Carbonating the Root Beer
- 8
Prepare for Carbonation
In clean, sanitized bottles, fill each bottle with ice cubes (about 1 cup per bottle).
- 9
Bottle the Root Beer
Pour the root beer mixture into the bottles, leaving about an inch of headspace at the top.
- 10
Add Club Soda
Top each bottle with chilled club soda, filling to the neck of the bottle.
- 11
Seal and Ferment
Seal the bottles tightly and let them ferment at room temperature for 2-3 days. Check daily for carbonation.
- 12
Refrigerate and Serve
Once carbonated, refrigerate the bottles to stop fermentation. Serve chilled and enjoy your homemade root beer!
