Marinate the Chicken
In a bowl, combine the buttermilk and Nashville hot chicken seasoning. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

Fry the Chicken
Heat vegetable oil in a deep pan over medium-high heat. Remove the chicken from the marinade and let excess drip off. Dredge in flour, then carefully place in the hot oil. Fry for about 6-8 minutes on each side until golden brown and cooked through. Drain on paper towels and keep warm.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice until pale. Place over a pot of simmering water, whisking constantly. Gradually add melted butter until the sauce thickens. Stir in salt and cayenne pepper. Keep warm.

Prepare the Biscuit Dough
Preheat your oven to 425°F (220°C). In a bowl, mix flour, baking powder, and salt. Cut in the butter until mixture resembles coarse crumbs. Stir in milk until just combined. Do not overmix.

Wash and halve the baby potatoes. Toss with olive oil, paprika, salt, and black pepper. Spread on a baking sheet and roast in the oven at 425°F (220°C) for 25-30 minutes until crispy and tender.
