Junior Sides

Method

Kansas City Burnt Ends

  1. 1

    Prepare the Brisket

Trim the brisket to remove excess fat and cut it into 1-inch cubes.

  2. 2

    Season the Brisket

In a bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, and onion powder. Rub this mixture over the brisket cubes.

  3. 3

    Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket cubes on the smoker and smoke for 4 hours.

  4. 4

    Glaze with BBQ Sauce

After 4 hours, remove the burnt ends from the smoker and toss them in BBQ sauce. Return them to the smoker for another hour.

Smoked Ribs

  1. 5

    Prepare the Ribs

Remove the membrane from the back of the ribs. Apply a generous layer of dry rub seasoning over the ribs.

  2. 6

    Prepare for Smoking

Preheat your smoker to 250°F (121°C). Place the ribs on the smoker.

  3. 7

    Smoke the Ribs

Smoke the ribs for approximately 3-4 hours. After the first hour, spritz with apple cider vinegar every hour.

Smoked Wings

  1. 8

    Prepare the Wings

Pat the chicken wings dry with paper towels. Season with garlic powder and salt.

  2. 9

    Smoke the Wings

Preheat your smoker to 225°F (107°C) and smoke the wings for 1.5 hours.

  3. 10

    Toss in Wing Sauce

After smoking, toss the wings in your choice of wing sauce and return to the smoker for an additional 15-20 minutes.

Junior Sides

  1. 11

    Prepare Coleslaw

Mix shredded cabbage and carrots with mayonnaise, vinegar, sugar, salt, and pepper. Chill in the refrigerator for at least 30 minutes before serving.

  2. 12

    Prepare Baked Beans

Heat baked beans in a saucepan over medium heat until warmed through. Stir occasionally.
