Brining the Wings

Prepare the Brine
In a large mixing bowl, combine the red eye coffee, water, kosher salt, brown sugar, black peppercorns, bay leaves, and whole cloves. Stir until the salt and sugar are dissolved.

Add the whole chicken wings to the brine solution. Ensure the wings are fully submerged. Cover and refrigerate for at least 12 hours, preferably 24 hours for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat.

Prepare the Chicken Wings
Remove the wings from the brine and rinse them under cold water. Pat dry with paper towels. In a bowl, toss the wings with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, and black pepper until evenly coated.

Mix the BBQ Drizzle
In a small bowl, combine the spicy BBQ sauce and honey. Mix well until fully combined.
Making the Buttermilk-Chive Dressing

In a mixing bowl, whisk together buttermilk, mayonnaise, chopped chives, garlic powder, salt, and black pepper until smooth and creamy. Adjust seasoning to taste.

Serve the Wings
Once the wings are done grilling, remove them from the grill. Drizzle the spicy BBQ sauce over the wings. Serve with the buttermilk-chive dressing on the side for dipping.
