Method

Brining the Wings

    Prepare the Brine

    In a large mixing bowl, combine the red eye coffee, water, kosher salt, brown sugar, black peppercorns, bay leaves, and whole cloves. Stir until the salt and sugar are dissolved.

    Brine the Wings

    Add the whole chicken wings to the brine solution. Ensure the wings are fully submerged. Cover and refrigerate for at least 12 hours, preferably 24 hours for maximum flavor.

Cooking the Wings

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Prepare the Chicken Wings

    Remove the wings from the brine and rinse them under cold water. Pat dry with paper towels. In a bowl, toss the wings with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, and black pepper until evenly coated.

    Place the seasoned wings on the grill. Grill for about 20-25 minutes, turning occasionally, until the wings are crispy and cooked through (internal temperature should reach 165°F).
