Beef Brisket Preparation

Marinate the Brisket
In a bowl, mix together smoked paprika, garlic powder, onion powder, salt, black pepper, and liquid smoke. Rub this mixture all over the brisket. Cover and refrigerate for at least 4 hours, preferably overnight.

Hollandaise Sauce Preparation

Prepare the Butter
Melt butter in a small saucepan and set aside to cool slightly.

Whisk the Egg Yolks
In a heatproof bowl, whisk together the egg yolks and lemon juice until thickened. Place the bowl over a pot of simmering water (double boiler).

Combine and Whisk
Slowly drizzle in the melted butter while continuously whisking until the sauce thickens. Season with a pinch of salt and keep warm.

Bake the Potatoes
Spread the potatoes on a baking sheet in a single layer and bake for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.
