    Make the Pimento Cheese

    In a mixing bowl, combine the sharp cheddar cheese, cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until all ingredients are fully combined and creamy. Set aside.

    Prepare the Fried Green Tomatoes

    In one bowl, place the buttermilk. In another bowl, mix the cornmeal, flour, salt, and black pepper. Dip each slice of green tomato into the buttermilk, then dredge in the cornmeal mixture to coat. Heat the oil in a large skillet over medium-high heat. Fry the tomatoes until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

    Assemble the Grilled Pimento Cheese Sandwich

    Spread a generous layer of the homemade pimento cheese on two slices of sourdough bread. Add fried green tomatoes on top of the cheese, followed by slices of avocado and a sprinkle of Tillamook cheddar cheese. Top with another slice of sourdough bread. In a skillet, melt butter over medium heat and grill the sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
