    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse them under cold water and drain.

    Cook the Chorizo

    In a skillet over medium heat, add the smoked chorizo and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and whisk them together. Add salt and pepper to taste.

Cooking the Frittata

    Cook the Potatoes

    In the same skillet, add olive oil and heat over medium heat. Add the diced potatoes and cook, stirring occasionally, until they are crispy and golden brown, about 10-12 minutes.

    Once the potatoes are cooked, lower the heat and add the cooked chorizo back into the skillet. Pour the beaten eggs evenly over the potatoes and chorizo.

    Sprinkle the cotija cheese on top of the egg mixture, allowing it to melt slightly as the eggs cook.
