Thoroughly wash the Russet potatoes under cold running water to remove any dirt. Slice each potato into wedges, about 1/2 inch thick.

Place the potato wedges in a bowl of cold water and let them soak for about 30 minutes. This will help to remove excess starch and make them crispier when fried.
