Preparation of Cider Base

    Prepare the Cherries

    Wash the fresh cherries thoroughly, remove the stems and pits, then roughly chop them.

    Combine Ingredients

    In a large pot, combine the chopped cherries, apple juice, water, brown sugar, and lemon juice. Stir well to dissolve the sugar.

    Add Spices

    Add the cinnamon sticks, cloves, and nutmeg to the mixture. Bring to a gentle boil over medium heat.

    Simmer the Mixture

    Once boiling, reduce the heat to low and let the mixture simmer for about 30 minutes, stirring occasionally. This allows the flavors to meld.

Fermentation Process

    Cool the Mixture

    After simmering, remove the pot from heat and allow the mixture to cool to room temperature.

    Once cooled, sprinkle the yeast over the mixture and stir gently to combine.
