Burger Patty Preparation

    Prepare the Meat Mixture

    In a large bowl, combine the ground smoked brisket and finely chopped smoked bacon. Add salt and black pepper, mixing until well incorporated.

    Form the Patties

    Divide the mixture into two equal portions and form each portion into a patty, about ¾ inch thick. Make a small indentation in the center of each patty to prevent puffing during cooking.

Caramelizing Onions

    Slice the Onion

    Peel and slice the yellow onion into thin rings.

    Cook the Onions

    In a skillet over medium heat, add olive oil and sliced onions. Sprinkle with a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are soft and caramelized.

Cooking the Burger

    Grill the Patties

    Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    During the last minute of cooking, place a slice of provolone cheese on top of each patty to melt.
