Burger Patty Preparation

Prepare the Meat Mixture
In a large bowl, combine the ground smoked brisket and finely chopped smoked bacon. Add salt and black pepper, mixing until well incorporated.

Form the Patties
Divide the mixture into two equal portions and form each portion into a patty, about ¾ inch thick. Make a small indentation in the center of each patty to prevent puffing during cooking.

Slice the Onion
Peel and slice the yellow onion into thin rings.

Add Cheese
During the last minute of cooking, place a slice of provolone cheese on top of each patty to melt.
Assembling the Burger

Build the Burger
On the bottom half of each toasted bun, place a lettuce leaf, followed by the burger patty with melted cheese, caramelized onions, a slice of tomato, and a tablespoon each of ketchup and mustard. Top with the other half of the bun.
