Method

Smoked Burnt Ends

    Prepare the Brisket

    Trim any excess fat from the beef brisket and cut it into 1-inch cubes.

    In a bowl, mix salt, black pepper, smoked paprika, and brown sugar. Rub the seasoning mix all over the brisket cubes.

    Smoke the Burnt Ends

    Preheat your smoker to 225°F (107°C). Place the seasoned brisket cubes in the smoker and smoke for 4-5 hours until tender.

    Caramelize the Burnt Ends

    Remove the burnt ends from the smoker, toss them in BBQ sauce, and return them to the smoker for an additional 1 hour to caramelize.

Smoked Sausage

    Place the smoked sausage in the smoker for about 1 hour, or until heated through and slightly smoky.

Fried Jalapeños

    Slice the jalapeños into rings, removing seeds if desired for less heat.

    Soak the jalapeño rings in buttermilk for at least 30 minutes.
