Preparation of Brisket

Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor. Rub the beef rub evenly over the entire brisket.

Making BBQ Sauce

Combine Ingredients
In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Simmer the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally. Allow it to simmer for about 15 minutes until slightly thickened.
Finishing the Burnt Ends

Cube the Brisket
Once the brisket is done, remove it from the smoker and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

Toss with BBQ Sauce
Place the cubed brisket into a large bowl and toss with the prepared BBQ sauce until well coated.

Return to Smoker
Return the coated burnt ends to the smoker and cook for an additional 1-2 hours at 250°F (121°C) to caramelize the sauce.
