Method

Preparing the Brisket

    Season the Brisket

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this mixture generously over the entire surface of the brisket.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the seasoned brisket in the smoker and cook for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C). This typically takes around 4.5 to 5 hours for a 3 lbs brisket.

    Rest the Brisket

    Once cooked, remove the brisket from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

    Slice the Brisket

    After resting, slice the brisket against the grain into thin slices.

Assembling the Sandwich

    Prepare the Buns

    Toast the sandwich buns until golden brown. This can be done on a grill or in a toaster.

    Build the Sandwich

    On the bottom half of each toasted bun, layer a generous amount of sliced brisket. Add pickles on top, and drizzle with your choice of barbecue sauce. Place the top half of the bun on each sandwich.

    Serve the brisket sandwiches warm with extra barbecue sauce on the side, if desired.
