Prepare the Vegetables

    Caramelize Onions

    In a skillet, heat olive oil over medium heat. Add thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes or until the onions are golden brown and caramelized.

    Sauté Peppers

    In the same skillet, add the thinly sliced bell peppers to the caramelized onions. Cook for an additional 5-7 minutes until the peppers are tender. Season with black pepper and set aside.

Prepare the Cheese Schmear

    Mix Gouda Schmear

    In a small bowl, combine the shredded gouda cheese with a small amount of olive oil (about 1 tsp) to create a schmear. Mix until well combined.

Assemble the Cheesesteak

    Layer Ingredients

    Take the hoagie rolls and spread the gouda schmear evenly on the inside. Fill each roll with the chopped brisket, then layer with caramelized onions and sautéed peppers. Top with provolone cheese.

    Melt the Cheese

    Place the assembled hoagies under a broiler for 2-3 minutes until the provolone cheese is melted and bubbly.

Prepare the Dipping Jus

    Mix Dipping Jus

    In a small saucepan, combine the beef broth and XO sauce. Heat over medium heat until warmed through, stirring occasionally.

Serve

    Remove the hoagies from the broiler and serve immediately with the warm XO dipping jus on the side.
