Pork Preparation
- 1
Prepare the Pork
In a slow cooker, place the pork shoulder. Add the diced onion, minced garlic, smoked paprika, cumin, salt, and black pepper. Pour the chicken broth over the meat.
- 2
Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and easily shredded with a fork.
- 3
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook on low for an additional 30 minutes.
Slaw Preparation
- 4
Mix the Slaw Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss everything together until well mixed.
- 5
Chill the Slaw
Cover the slaw and refrigerate for at least 30 minutes to allow the flavors to meld.
Sandwich Assembly
- 6
Assemble the Sandwiches
To assemble, place a generous amount of the BBQ pulled pork on the bottom half of each hamburger bun. Top with a scoop of the prepared slaw and add pickles, if desired. Place the top half of the bun over the slaw to complete the sandwich.
