Method

Brined Chicken

    Prepare the Brine

    In a large pot, combine Dr. Pepper, water, kosher salt, brown sugar, black peppercorns, garlic cloves, and bay leaves. Bring to a boil until the salt and sugar dissolve completely.

    Brine the Chicken

    Once the brine is cool, submerge the whole chicken in the brine. Cover and refrigerate for at least 4 hours or overnight for best results.

    Smoke the Chicken

    Preheat your smoker to 225°F (107°C). Remove the chicken from the brine, rinse, and pat dry. Place the chicken in the smoker and smoke for approximately 3-4 hours, or until the internal temperature reaches 165°F (74°C).

Alabama White BBQ Sauce

    Mix the Sauce

    In a mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, horseradish sauce, salt, black pepper, and cayenne pepper. Whisk until smooth and well combined.

Corn & Black-Eyed Pea Succotash

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the fresh corn kernels, diced red bell pepper, and chopped green onions. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Black-Eyed Peas

    Stir in the cooked black-eyed peas and season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.

Crispy Okra

    Prepare the Okra

    Soak the sliced okra in buttermilk for 30 minutes.

    Coat the Okra

    In a bowl, combine cornmeal and salt. Remove the okra from the buttermilk and coat each piece in the cornmeal mixture.

    Fry the Okra

    In a large pot, heat oil over medium-high heat. Fry the okra in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels.

Jalapeño-Cheddar Biscuits

    Prepare the Biscuit Dough

    Preheat the oven to 425°F (220°C). In a mixing bowl, combine all-purpose flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

    Add Cheese and Jalapeño

    Stir in shredded cheddar cheese and diced jalapeño. Add milk gradually, mixing until a dough forms.

    Bake the Biscuits

    Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.
