Crust Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, sugar, and salt.

Cut in Butter
Add the cold, unsalted butter, cut into small cubes, to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.

Chill the Dough
Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare Apples
Peel, core, and slice the apples. Place them in a large bowl.

Mix Filling Ingredients
Add sugar, ground cinnamon, nutmeg, lemon juice, and flour to the apples. Toss until the apples are evenly coated.
Assembly and Baking

Preheat Oven
Preheat your oven to 425°F (220°C).

Pour the apple mixture into the crust, making sure it's evenly distributed. Dot the filling with butter.

Roll out the second disk of dough and place it over the filling. Seal and flute the edges. Cut slits in the top crust to allow steam to escape.

Bake
Bake in the preheated oven for 15 minutes. Then, reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes or until the apples are tender and the crust is golden brown.

Let the pie cool for at least 2 hours before slicing. Serve warm or at room temperature.
