Prepare and Marinate
Pat the chicken wings dry with paper towels. In a large bowl combine minced garlic, grated ginger, soy sauce, fish sauce, brown sugar, white pepper, sesame oil, and lime juice. Add the wings and toss to coat thoroughly. Cover and refrigerate at least 1 hour, ideally 3–4 hours or overnight for best flavor.

Fry Shallots
While wings marinate or about 30 minutes before frying the chicken: heat 1/4 to 1/2 cup oil in a small skillet over medium heat. Add thinly sliced shallots in a single layer (work in batches if necessary). Fry, stirring occasionally, until golden brown and crisp, about 6–10 minutes. Use a slotted spoon to transfer to a plate lined with paper towels and immediately sprinkle 1/4 tsp salt. Let cool; shallots will crisp further. Reserve oil for another use or discard once cooled.

Prepare Breading
About 20 minutes before frying, remove wings from fridge so they come closer to room temperature. In a wide bowl whisk together all-purpose flour, cornstarch, baking powder, 1 tsp salt, and 1/4 tsp white pepper. For a drier extra-crispy coating, use the dry mix only. For a slightly thicker, more puffy crust, whisk in about 3/4 cup cold water to make a thin batter (batter should coat but not be runny).

Heat Oil
Fill a deep pot or heavy Dutch oven with oil to a depth of about 4–5 cm (enough to submerge wings). Heat oil over medium-high to 180°C (350°F). If you don't have a thermometer, test by dropping a pinch of flour—if it sizzles and rises gently, oil is ready.

Coat and Fry Wings
Working in batches (do not overcrowd), remove wings from marinade letting excess drip off. Dredge each wing in the dry mix or dip into the batter, shaking off excess. Carefully lower wings into hot oil. Fry until golden brown and cooked through, about 8–10 minutes per batch depending on size—internal temperature should reach 74°C (165°F). Turn once during frying for even color. Use a slotted spoon and transfer to a wire rack or paper towels to drain. Keep finished wings in a warm oven (100–120°C / 210–250°F) while you fry the rest to maintain crispness.
Sweet-Spicy Sauce

Make Sauce
While wings fry, whisk together ketchup, rice vinegar, sambal or sweet chili paste, fish sauce, honey, and 2 tbsp water in a small saucepan. Bring gently to a simmer over medium-low heat. Mix 1 tsp cornstarch with 1 tsp cold water to make a slurry, then whisk into the sauce. Simmer 1–2 minutes until slightly thickened and glossy. Taste and adjust sweetness, heat, or acidity as needed. Keep warm.
Assembly & Serve

Place fried wings on a serving platter. Spoon or drizzle some of the sweet-spicy sauce over the wings (or serve sauce on the side for dipping). Scatter the crispy fried shallots evenly over the wings. Garnish with chopped cilantro if using and serve with lime wedges on the side for squeezing over. Serve immediately so wings remain crisp. Recommended serving: 6–8 wings per person as a starter.
