1. Prepare glass and ice
Place 4 ice cubes into a chilled 12–16 oz glass (or adjust to desired chill). If you prefer the drink less diluted, use crushed ice or chill coconut water beforehand.
2. Combine ingredients
Pour 1 cup of young coconut water into a shaker or mixing glass. Add 1 tablespoon of soft coconut meat, 1/2 teaspoon fresh lime juice, 1 teaspoon simple syrup (or honey), and a pinch (1/4 tsp) of fine sea salt.
3. Mix and lightly emulsify
Firmly shake for 8–12 seconds if using a cocktail shaker, or stir vigorously for 20–30 seconds with a bar spoon so the coconut meat disperses slightly and the flavors meld. If you prefer a smoother texture, blend briefly (2–3 seconds) in a hand blender or small countertop blender — do not puree to avoid overly frothy texture.
4. Strain and serve
Strain the liquid into the prepared glass over the ice. Use a fine mesh strainer if you blended to catch coconut meat fragments; if you want texture, pour directly.
5. Garnish and finish
Gently slap 2 mint leaves between your palms to release aroma and rest them on the drink (or tuck on the rim). Optionally stir once with a straw. Taste and adjust sweetness or acidity: add up to 1 additional teaspoon simple syrup or another 1/4 tsp lime juice as needed.
