Tortillas Preparation

Warm the tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are soft and pliable. Keep them warm in a clean kitchen towel.

Cook the meat
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

Add the beef
Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Season the meat
Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to allow the flavors to meld.

Make the salsa
In a bowl, combine the diced tomatoes, chopped red onion, and chopped cilantro. Drizzle with lime juice and season with salt to taste. Mix well.
Assemble the Tacos

Fill the tacos
Take a warm tortilla and spoon the cooked meat mixture into the center. Top with a generous amount of fresh salsa.
