Cheese Mixture Preparation

Grate the Cheddar Cheese
Using a box grater or food processor, grate the sharp cheddar cheese and place it in a medium mixing bowl.

Combine Ingredients
Add cream cheese, pimentos (drained), mayonnaise, garlic powder, onion powder, cayenne pepper, and season with salt and black pepper to the bowl.

Mix Thoroughly
Using a fork or spatula, mix all ingredients together until well combined and smooth. Adjust seasoning to taste.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the pimento cheese mixture for at least 30 minutes to allow flavors to meld.

Prepare the Bread
Spread butter on one side of each slice of sourdough bread.

Assemble the Sammie
Spread a generous amount of the chilled pimento cheese mixture on the unbuttered side of two slices of bread. Top with the other two slices, buttered side facing out.

Cook the Sammie
In a skillet over medium heat, place the assembled sammies and cook for about 3-4 minutes per side, or until golden brown and crispy.

Remove from skillet, cut the sammies in half, and serve warm with your favorite pickles or chips on the side.
