Method

Pimento Cheese Spread

    Prepare the Cheese Spread

    In a large bowl, combine the smoked Gouda cheese, sharp cheddar cheese, chopped pimentos, softened cream cheese, and mayonnaise. Mix until well combined.

    Season the Spread

    Add garlic powder, onion powder, salt, and black pepper to the cheese mixture. Stir until evenly distributed. Taste and adjust seasoning if necessary. Set aside.

Candied Bacon

    Cook the Bacon

    Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Place bacon strips on the sheet.

    Add Sugar and Bake

    Sprinkle brown sugar and black pepper over the bacon. Bake in the oven for 15-20 minutes, or until the bacon is crispy and caramelized. Remove from oven and let cool before chopping into small pieces.

Sandwich Assembly

    Butter the Bread

    Spread butter on one side of each slice of onion bread.

    Assemble the Sandwiches

    Spread a generous layer of the pimento cheese spread on the unbuttered side of two slices of bread. Top with chopped candied bacon, then place the other two slices of bread on top, buttered side facing outward.

    Griddle the Sandwiches

    Heat a griddle or skillet over medium heat. Add the sandwiches and cook until golden brown and crispy on both sides, about 3-4 minutes per side.

    Serve

    Slice the sandwiches in half and serve warm with jalapeno jelly on the side.
