Method

Crust Preparation

  1. 1

    Make the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, mix together the flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Press the mixture into the bottom of a 9-inch tart pan evenly.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and allow to cool.

Caramel Filling Preparation

  1. 3

    Prepare the Caramel

In a medium saucepan over medium heat, combine granulated sugar and 1/4 cup of water. Stir until the sugar dissolves, then stop stirring. Allow to boil until it turns a deep amber color (about 10-12 minutes).

  2. 4

    Add Cream and Butter

Remove the saucepan from heat and carefully stir in the heavy cream and butter until smooth. Add vanilla extract and mix well.

  3. 5

    Pour Filling

Pour the caramel filling over the cooled crust. Let it set for about 15 minutes.

Toffee Layer Preparation

  1. 6

    Make the Toffee

In a saucepan, melt 1/4 cup of butter over medium heat. Stir in brown sugar and cook until it begins to bubble. Remove from heat and stir in chopped pecans.

  2. 7

    Layer the Toffee

Spread the toffee mixture evenly over the caramel layer. Allow to cool completely.

Topping Preparation

  1. 8

    Melt Chocolate

In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.

  2. 9

    Add Topping

Drizzle the melted chocolate over the toffee layer and sprinkle whole pecans on top. Let it set for about 30 minutes before serving.
