Preparation

    Prepare the Cucumbers

    Wash the cucumbers thoroughly under cool water. Cut the cucumbers into thick slices or quarters, depending on your preference for pickle thickness. Place the cucumber slices in a large bowl.

    Slice the Onion

    Peel and thinly slice the onion. Add the sliced onion to the bowl with the cucumbers.

Pickling Process

    Make the Brine

    In a medium saucepan, combine sugar, apple cider vinegar, salt, turmeric, mustard seeds, celery seeds, and crushed Arbol chili. Heat the mixture over medium heat, stirring until the sugar and salt are fully dissolved.

    Combine and Cool

    Once the brine reaches a gentle simmer, remove it from heat and let it cool down for about 15-20 minutes.

Canning

    Jar the Pickles

    Pack the cucumber and onion mixture tightly into sterilized jars. Pour the cooled brine over the cucumbers and onions, ensuring that they are completely submerged. Leave about 1/2 inch of space at the top of each jar.

    Seal and Refrigerate

    Seal the jars with lids and refrigerate. Let the pickles sit for at least 24 hours before consuming, allowing the flavors to meld.
